Spareribs with the 1-2-3 method
How to get super tender spareribs? 3 hours smoking, 2 hours wrapping, 1 hour finishing.
Ingredients:
- 2 racks (rib racks) Spareribs
- 2 tablespoons yellow mustard
- 1/4 cup brown sugar
- 1/4 cup paprika powder
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 1 tablespoon ground black pepper
- 1 tablespoon salt
- 1/2 cup apple juice (or other liquid of choice, such as beer)
Supplies:
- herQs Professional thermometer with wifi connectivity
- Grill (charcoal or gas grill)
- Aluminum foil
Instructions:
- Prepare the Spareribs by removing the membrane from the back of the ribs. Spread a thin layer of yellow mustard on both sides of the Spareribs to help the spices adhere better.
- In a bowl, whisk together the brown sugar, paprika, garlic powder, onion powder, ground black pepper, and salt to make a flavorful dry rub.
- Rub the dry rub over both sides of the spareribs, making sure the ribs are well coated with the spices.
- Wrap the spareribs in aluminum foil and let them rest in the refrigerator for at least 1 hour (or even a few hours) to allow the flavors to infuse.
- While the Spareribs are resting, you can prepare the herQs Professional thermometer. Install the herQs app on your mobile device and connect the herQs Professional thermometer to wifi according to the instructions in the manual.
- Preheat the grill to indirect medium heat (about 120-130°C).
- Place the Spareribs on the grill, away from direct heat. Add a smoker's package with apple wood chips for extra smoke flavor.
- Place the herQs Professional thermometer in the thickest part of a Sparerib, without touching the bone. Make sure the probe is properly attached.
- Close the lid of the grill and let the spareribs smoke for 2 hours over indirect heat.
- After 2 hours, spray the spareribs with apple juice to keep them moist.
- Let the Spareribs grill for another hour over indirect heat, checking the temperature via the herQs app on your mobile device.
- Once the Spareribs have reached an internal temperature of about 92°C, they are done! Remove them from the grill and let them rest for a few minutes.
- Cut the spareribs between the bones and serve with your favorite barbecue sauce and side dishes.
