Spareribs with the 1-2-3 method

How do you get super tender spareribs? 3 hours smoking, 2 hours packing, 1 hour varnishing.

Ingrediënten:
  • 2 racks (ribbenrekken) Spareribs
  • 2 eetlepels gele mosterd
  • 1/4 kopje bruine suiker
  • 1/4 kopje paprikapoeder
  • 2 eetlepels knoflookpoeder
  • 2 eetlepels uienpoeder
  • 1 eetlepel gemalen zwarte peper
  • 1 eetlepel zout
  • 1/2 kopje appelsap (of een andere vloeistof naar keuze, zoals bier)
Benodigdheden:
  • herQs Professional thermometer met wifi-connectiviteit
  • Grill (houtskool- of gasgrill)
  • Aluminiumfolie

Instructions:
  1. Prepare the Spareribs by removing the membrane on the back of the ribs. Spread a thin layer of yellow mustard on both sides of the Spareribs to help the spices adhere better.
  2. In a bowl, mix together the brown sugar, paprika, garlic powder, onion powder, ground black pepper and salt to make a flavorful dry rub.
  3. Rub the dry rub over both sides of the Spareribs, making sure the ribs are well coated with the seasoning.
  4. Wrap the Spareribs in aluminum foil and let them rest in the refrigerator for at least 1 hour (or even several hours) to allow the flavors to soak in.
  5. While the Spareribs are resting, prepare the herQs Professional thermometer. Install the herQs app on your mobile device and connect the herQs Professional thermometer to wifi following the instructions in the manual.
  6. Preheat the grill to indirect medium-high heat (about 120-130°C).
  7. Place the Spareribs on the grill away from direct heat. Add a smoke packet with apple wood chips, for example, for extra smoke flavor.
  8. Insert the herQs Professional thermometer into the thickest part of a Sparerib, without touching the bone. Make sure the probe is properly attached.
  9. Close the lid of the grill and let the Spareribs smoke over indirect heat for 2 hours.
  10. After 2 hours, spray the Spareribs with apple juice to keep them moist.
  11. Let the Spareribs grill on indirect heat for another 1 hour, checking the temperature via the herQs app on your mobile device.
  12. Once the Spareribs reach an internal temperature of about 92°C, they are ready! Remove them from the grill and let them rest for a few minutes.
  13. Slice the Spareribs between the bones and serve with your favorite barbecue sauce and side dishes.
